Sauteed Chicken Hearts

An easy, low-prep way to start eating organs. Chicken hearts are delicious and a great source of collagen, B vitamins, and trace minerals!

Directions
Ingredients
- 1 lb. chicken hearts
- 2 tbsp. lard or leaf lard
- 1 tsp. sea salt
- 1/4 tsp. black pepper
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. smoked paprika
- 1/2 tsp. ground cumin
- 2 tbsp. parsley - chopped
Directions
- Place the hearts, salt, pepper, garlic powder, onion powder, paprika, and cumin a bowl and mix until well coated.
- Add the lard to a large, heavy frypan and warm over medium-high heat for about 3 minutes.
- Add the seasoned hearts. Cook, stirring often, until browned and cooked through, 5-7 minutes. Lower heat to medium if necessary.
- Garnish the hearts with parsley. Serve hearts over rice and vegetables, or with naan and hummus.
