Sauteed Chicken Hearts
An easy, low-prep way to start eating organs. Chicken hearts are delicious and a great source of collagen, B vitamins, and trace minerals!

Directions

Ingredients

  • 1 lb. chicken hearts 
  • 2 tbsp. lard or leaf lard
  • 1 tsp. sea salt
  • 1/4 tsp. black pepper
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/2 tsp. smoked paprika
  • 1/2 tsp. ground cumin
  • 2 tbsp. parsley - chopped 

Directions

  1. Place the hearts, salt, pepper, garlic powder, onion powder, paprika, and cumin a bowl and mix until well coated. 
  2. Add the lard to a large, heavy frypan and warm over medium-high heat for about 3 minutes. 
  3. Add the seasoned hearts. Cook, stirring often, until browned and cooked through, 5-7 minutes. Lower heat to medium if necessary. 
  4. Garnish the hearts with parsley. Serve hearts over rice and vegetables, or with naan and hummus.
