Pan-Seared Flank Steak

A quick and easy flank steak recipe! Skip the marinade and opt for a simple seasoning and searing it on the stove. Our favorite way to enjoy this? With a homemade chimichurri sauce on the side.

Ingredients
- 1 to 2 lbs. flank steak
- Sea salt and pepper, to taste
- Lard (or other preferred cooking oil)
Directions
- About 30 minutes before you plan on cooking, pull steak out of refrigerator and let sit on the counter until it comes to room temperature.
- Add lard to a cast-iron pan and preheat to high heat. Make sure to swirl the lard around so that it is evenly coated.
- Once the pan is hot and the lard is smoking, add the steak and sear on one side for 6-8 minutes.
- Flip the steak and cook for another 4-6 minutes, or until a meat thermometer reads 135°F – 145°F. It should be browned on both sides and pink in the middle.
- Rest the steak for 10 minutes before slicing it against the grain.
- Enjoy plain or top with fresh chimichurri sauce..
