Pan-Seared Flank Steak
A quick and easy flank steak recipe! Skip the marinade and opt for a simple seasoning and searing it on the stove. Our favorite way to enjoy this? With a homemade chimichurri sauce on the side.

Ingredients

  • 1 to 2 lbs. flank steak
  • Sea salt and pepper, to taste
  • Lard (or other preferred cooking oil) 

Directions

  1. About 30 minutes before you plan on cooking, pull steak out of refrigerator and let sit on the counter until it comes to room temperature.
  2. Add lard to a cast-iron pan and preheat to high heat. Make sure to swirl the lard around so that it is evenly coated. 
  3. Once the pan is hot and the lard is smoking, add the steak and sear on one side for 6-8 minutes. 
  4. Flip the steak and cook for another 4-6 minutes, or until a meat thermometer reads 135°F – 145°F. It should be browned on both sides and pink in the middle.
  5. Rest the steak for 10 minutes before slicing it against the grain.
  6. Enjoy plain or top with fresh chimichurri sauce..
