Cinnamon Apple Cake
This is one of my most beloved childhood recipes, and one that I've carried into adulthood. The secret is the cream cheese, which creates a moist and flavorful cake. It's perfect for a weekend brunch, or afternoon tea on a dreary winter day.

  1. Preheat oven to 350 F. Lightly grease a 9" springform pan, square pan, or pie dish.
  2. Beat 1 1/2 cup sugar, cream cheese, butter, and vanilla at medium speed in a stand mixer or with a hand mixer. Add eggs, one at a time, and beat well.
  3. Lightly spoon flour, baking powder, and salt together in a bowl. Add to creamed mixture and beat until blended.
  4. In a small bowl, combine the remaining 1/4 cup sugar and cinnamon. Add 2 tbsp. of the cinnamon mixture to the chopped apples in a bowl, and stir well.
  5. Add apple mixture to cake batter, and stir until combined.
  6. Pour batter into pan. Sprinkle with remaining cinnamon mixture to top.
  7. Bake for 60-70 minutes, or until cake pulls away from the sides of the pan or a knife inserted in the middle comes out clean. Cool and serve.
