Sautéed Chicken Gizzards

Not a fan of fried food? Enjoy these simple sautéed gizzards instead. Gizzards are an excellent source of magnesium, copper, and protein. And they're a good way to learn to eat nose to tail!

Ingredients
- 1 pack chicken gizzards
- 1/2 onion, sliced
- 2 cloves garlic, minced
- Salt, to taste
- Lard, to cook
Directions
- Bring a pot of salted water to boil. While water is coming to temperature, slice gizzards in half.
- Once water is boiling, carefully put in gizzards using a slotted spoon. Bring back to a boil and cook for about 5 minutes; then turn down heat to a low boil and cook for 25 more minutes.
- Carefully drain the gizzards. While they are cooling, slice the onions and garlic.
- Heat a pan over medium heat and add lard. Once the lard is ready, add the gizzards carefully and cook for 2-3 minutes, or until starting to brown.
- Add the onions and stir frequently, until the onions are a golden color and gizzards are browned. Add the garlic for the last minute of cooking and stir until fragrant, but turn off heat before the garlic burns.
- Serve over polenta or rice. You can also add chopped greens if you'd like to make it a complete meal.
