Sautéed Chicken Gizzards
Not a fan of fried food? Enjoy these simple sautéed gizzards instead. Gizzards are an excellent source of magnesium, copper, and protein. And they're a good way to learn to eat nose to tail!

  1. Bring a pot of salted water to boil. While water is coming to temperature, slice gizzards in half.
  2. Once water is boiling, carefully put in gizzards using a slotted spoon. Bring back to a boil and cook for about 5 minutes; then turn down heat to a low boil and cook for 25 more minutes.
  3. Carefully drain the gizzards. While they are cooling, slice the onions and garlic.
  4. Heat a pan over medium heat and add lard. Once the lard is ready, add the gizzards carefully and cook for 2-3 minutes, or until starting to brown.
  5. Add the onions and stir frequently, until the onions are a golden color and gizzards are browned. Add the garlic for the last minute of cooking and stir until fragrant, but turn off heat before the garlic burns.
  6. Serve over polenta or rice. You can also add chopped greens if you'd like to make it a complete meal.
