Pork Liver, Bacon, & Onions

A quick and simple way to try liver. If you've been making paté, but want to be more adventurous in the kitchen, this is a great recipe to try. Just season and sauté, and in 25 minutes you'll have a flavorful, nutritious meal.

Ingredients
- (1 lb.) Pork Liver
- (1/4 cup) All-Purpose Flour
- (1/2 tsp.) Salt
- (1/8 tsp.) Pepper
- (2) Onions, sliced
- (4 slices) Bacon - Natural Cure
Directions
- Cut liver into serving-sized pieces. In shallow bowl, combine flour, salt and pepper; mix well. Coat liver with flour mixture.
- In large skillet, cook bacon over medium heat until crisp. Remove bacon; drain on paper towel, reserving drippings in skillet.
- Add liver and onions to skillet; cook 2 to 3 minutes on each side or until thoroughly cooked. Serve topped with crisp bacon.
