Baked Chicken Tenders

A quick meal that will please everyone! This is one of my go-to options for batch meal prepping - just triple (or quadruple) the recipe. And since you're using pasture-raised, non-GMO chicken, pasture-raised eggs, and baking (not frying) the chicken, these are some of the healthiest chicken fingers you can have.

Ingredients
- 1 pack chicken breasts, sliced into 1/2-inch strips (or 1 pack of chicken tenders)
- 1-2 pasture-raised eggs, beaten in a shallow bowl
- 1 cup panko breadcrumbs (swap sourdough bread crumbs)
- 1 tsp paprika
- 1 tsp salt
- 1 tsp freshly ground pepper
- 1/2 tsp garlic powder
Directions
- Preheat oven to 375 F.
- Beat the eggs in a shallow bowl. In another shallow bowl or plate, combine the breadcrumbs and seasoning.
- Dredge each tender in the eggs first, then roll in the breadcrumb mixture. Place on a baking sheet and repeat. Drizzle the tenders lightly with preferred oil, tallow, or lard.
- Cook for 15-20 minutes, or until the breadcrumbs are golden and the internal temperature reaches 165 F.
