Baked Chicken Tenders
A quick meal that will please everyone! This is one of my go-to options for batch meal prepping - just triple (or quadruple) the recipe. And since you're using pasture-raised, non-GMO chicken, pasture-raised eggs, and baking (not frying) the chicken, these are some of the healthiest chicken fingers you can have.

Directions

Ingredients

  • 1 pack chicken breasts, sliced into 1/2-inch strips (or 1 pack of chicken tenders)
  • 1-2 pasture-raised eggs, beaten in a shallow bowl
  • 1 cup panko breadcrumbs (swap sourdough bread crumbs) 
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp freshly ground pepper
  • 1/2 tsp garlic powder 

Directions

  1. Preheat oven to 375 F. 
  2. Beat the eggs in a shallow bowl. In another shallow bowl or plate, combine the breadcrumbs and seasoning. 
  3. Dredge each tender in the eggs first, then roll in the breadcrumb mixture. Place on a baking sheet and repeat. Drizzle the tenders lightly with preferred oil, tallow, or lard. 
  4. Cook for 15-20 minutes, or until the breadcrumbs are golden and the internal temperature reaches 165 F.
