Taken from the chuck (back portion) of the cow, short ribs are quickly becoming all the rage in restaurants and at home. And it's for good reason! Because short ribs come from both the chuck and rib portions of a cow, they combine qualities from both cuts: marbling like a rib steak, and richness and depth like a chuck roast.


These Korean-style short ribs are cut lengthwise across the rib bones. Try marinating them overnight, and then grilling them.
