Simple Pork and Beef Meatballs

A nourishing, whole-food recipe that's quick to prep, uses just a few ingredients, and can easily be doubled to freeze or make multiple meals. Make these a staple in your kitchen!

Directions
Ingredients
- 1 lb. ground pork
- 1 lb. gourmet ground beef or regular ground beef (swap Ancestral for a nutrient boost!)
- 2 pasture-raised eggs
- 1/2 cup panko bread crumbs (or swap homemade sourdough bread crumbs)
- 3 garlic cloves, minced
- 1/2 cup grated Parmesan cheese
- 2 tsp. salt
- 1 tsp. pepper
- 1 tsp. chopped fresh parsley (or swap dried Italian herb seasoning)
Directions
- Preheat oven to 425 F.
- Whisk the egg in a large bowl. Then add the remaining ingredients and mix together with your hands. Shape into 24-30 meatballs and place on baking sheet.
- Cook for 15-20 minutes, or until browned and the internal temperature of the meatballs is 165 F.
- To make as a meal, pair with spaghetti and marina; with rice and veggies to make bowls; alongside orzo and roasted vegetables or sautéed greens; or with hummus, pita, and chopped vegetables.
