Ingredients
- 2 Tbsp. extra virgin olive oil or butter
- 1 lb. extra sage pork sausage
- 1 1/2 tsp. salt
- 1/2 cup butter
- 1 tsp. garlic powder
- 2 pasture-raised eggs
- 1 cup buttermilk
- 1 Tbsp. pure maple syrup
- 2 cups organic sprouted spelt flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 2 cups shredded cheese
- Chopped fresh or dried rosemary, to taste
Directions
- Preheat oven to 400 degrees F.
- Coat muffin pans with olive oil, butter, or preferred baking grease.
- Cook sausage in a skillet over medium heat until crumbly, crispy, and brown. Turn off heat and transfer to a plate or dish.
- While sausage is cooking, whisk flour, baking powder, baking soda, salt, and garlic powder in a bowl.
- Turn skillet to low and melt butter. Let cool for about five minutes. While butter is cooling, whisk together eggs, buttermilk, and syrup. Pour in cooled butter and whisk.
- Add dry mixture to wet mixture, whisking as you go. Add sausage, cheese, and rosemary and stir until combined.
- Pour into muffin pans and bake for 20-22 minutes, or until lightly browned and an inserted knife emerges clean.
