- Servings: 4
Directions
Ingredients
- 1 lb. ground pork
- 2-3 cups rice
- Preferred seasonings (we like a mix of salt, pepper, garlic powder, cumin, and paprika)
- Chopped veggies for topping (like green onions, shredded carrots, chopped cucumbers or greens, etc.)
- 2 tbsp. Spicy Kick Peanut Butter
- 1-2 tbsp. soy sauce or coconut aminos
- 1 tbsp. rice vinegar
- 1 tbsp. honey
Directions
- Prepare rice according to package instructions or your preferred method. (We love the Instant Pot.)
- While rice is cooking, cook ground pork over medium to medium-high heat in a skillet on the stovetop. Crumble into pieces. When the meat is nearly done browning, add a mix of your favorite seasonings and stir.
- Chop veggies for topping and set aside.
- To make peanut sauce, combine peanut butter, soy sauce, rice vinegar, and honey in a jar and stir until smooth. If you want the sauce thinner, add a little water.
- To assemble bowls, put rice in the bottom, top with meat and veggies, and drizzle with peanut sauce. Enjoy!
