Mahi Mahi Tacos

Warm summer nights call for fish tacos. They cook quickly, pair well with in-season citrus, and provide the perfect refreshing twist on a classic meal.

Ingredients
- (1) Mahi Mahi
- (1 tsp.) Sea salt
- (1/2 tsp.) Chili powder
- (1/2 tsp.) Ground cumin
- (1/4 tsp.) Onion powder
- (1/4 tsp.) Garlic Powder
- (1/4 tsp.) Black Pepper
- (1-2 TBSP.) Lime juice
- (2 TBSP.) Lard or olive oil (for frying)
- (4-6) Tortillas
- Taco toppings (cheese, radish, cilantro, salsa, lettuce, sour cream, etc.)
Directions
- Combine the spices (sea salt, chili powder, ground cumin, onion powder, garlic powder, and pepper) in a small bowl.
- Brush the mahi with lime juice. Then, rub the spice mixture all over, distributing evenly on both sides. Let marinate for 10 minutes.
- As the fish is marinating, heat a skillet on medium-high heat.
- Add the fish to the hot skillet, searing for 2-3 minutes on each side. Reduce heat to low and cover, cooking for 2-3 minutes on each side, or until cooked through. The fish will be white throughout and will flake with a fork when it is ready.
- Flake or slice fish into pieces. Serve on tortillas with your favorite taco toppings.
