Christmas Morning Breakfast Casserole
Looking for a delicious and easy breakfast to feed a large crowd? This breakfast casserole is our secret. Pasture-raised eggs, hot pork sausage, and hash browns combine to make the perfect start to the day.

  • 1 dozen eggs
  • 1 tbsp. lard 
  • 2 lbs. sausage (we recommend hot pork and extra sage)
  • 1 medium onion, diced
  • 6 cups cooked hash browns
  • 4 cups shredded cheese
  • 1/2 cup cream-top milk
  • Salt, pepper, and Italian seasoning (to taste)


  1. Preheat oven to 350 F. Grease 9 x 13 casserole dish and set aside.
  2. In a large skillet, melt lard over medium heat and add onion, cooking for a few minutes. Add sausage and break into small crumbles, until browned. Set aside and add hash browns, and stir briefly to combine. 
  3. In a large bowl, whisk the eggs and milk together.
  4. Layer the sausage & hash brown mixture on the bottom of the casserole dish. Top with half the cheese and pour the milk and egg mixture over. Season with salt, pepper, and Italian seasoning (or other preferred seasoning). Top with the remaining cheese.
  5. Bake for 35-40 minutes or until the casserole is set.

Quick Tip: This can can be made ahead of time! Bake the night before and re-heat in the morning for an easy breakfast.
