Our go-to recipe for lean, high-protein meatballs, whether it's for dinner or the kids' lunches. These make a great option for freezer meals - just double or triple the recipe and freeze for later.

Ingredients
- 1 lb. sweet Italian or garlic basil chicken sausage
- 1 pasture raised egg
- 1/4 cup breadcrumbs
- 1/2 tsp salt (or more to taste)
- 1/2 tsp freshly ground pepper
- 1/2 tsp freshly chopped parsley (optional)
Directions
- Preheat the oven to 375 F.
- Combine all the ingredients in a mixing bowl. Gently shape into balls, about 1 1/2 inches in size. Place on a baking sheet.
- Cook for 20-25 minutes, or until golden brown and the juices run clear.
- Serve with pasta and sautéed greens or mushrooms; alongside rice and veggies; or on their own as a high-protein snack or lunch for the kids.
