An elegant choice for a special meal.

A "frenched" rack of lamb removes the extra meat and cartilage off the bones so it's more aesthetically pleasing - and easier to have hand-held lamb chops. It makes cutting and plating the individual chops easier, and is often the preferred way of butchering this particular cut.

Our rack of lamb comes from Katahdin hair-sheep that are 100% grass-fed, regularly rotated to fresh and rotated pasture, and do not receive dewormers, vaccines, or other medications. We also keep it as local as possible - our sheep are processed at our local butcher in Siler City, Chaudhry Halal Meat Co.

Quick Tip: This is a lean cut! Look for a recipe recommending a high heat method of cooking.
