And for good reason - the leg quarter can be used for nearly everything. The bones and collagen make the perfect sticky texture for sauces, but it's excellent roasted on its own, too. Our favorite way to cook it? Sear the quarters, skin side down, in a pan on the stovetop, and then flip over and finish cooking in the oven.

We cut these leg quarters into parts, by hand, on our farm at processing day. That means our chickens aren't just raised differently, but our processing results in higher-quality meat, too.

Our chickens are raised outside, on the grass, where they forage for bugs and are supplemented with an NC-grown and milled, 100% traceable, non-GMO ration. Being outside produces better fat quality and higher levels of collagen, protein, and vitamin E in our meat.
