Hanger steak is one of the most tender cuts of beef - and there's only one per cow! It's often nicknamed the "butcher's steak", because butchers often held onto it, rather than selling it. This has given hanger steak a reputation for being a tough and/or undesirable cut, but it's actually one of the best.
