A leaner form of ground beef, ground sirloin comes from the middle part (loin) of the steer, and contains between 8 to 14% fat, as opposed to the typical 20% in ground beef.

Why choose ground sirloin? Besides being leaner, it provides a "meatier" flavor than ground beef. In fact, if you're browning ground beef for sauces, tacos, or dishes such as chili, ground sirloin is a superior choice.
