Weeknight Stir Fry

Need a 20-minute recipe for chaotic nights? This is our go-to on the farm. Use whatever veggies you've got on hand, sauté them with a yummy sauce, and serve over rice. Filling, comforting, and EASY.

Ingredients
- Stir Fry Beef
- (1-2 tbsp) Cooking oil
- (2-3 cups) Assorted Veggies (such as peas, carrots, cauliflower, cabbage, greens, etc.)
- (1/3 cup) Soy sauce
- (1/4 cup) Sesame oil
- (1 tbsp.) Cornstarch
Directions
- Heat a skillet over medium-high heat. Add the stir fry beef and cook until browned, about 3-4 minutes. Remove from skillet and set aside.
- Heat the cooking oil in the skillet. Add the vegetables and cook until most of the liquid evaporates and the vegetables are soft.
- While the vegetables are cooking, mix the soy sauce, sesame oil, and cornstarch in a jar, and shake well.
- When the vegetables are almost done (about 3-5 minutes left), add the stir fry sauce to taste. (A little goes a long way!) Cook 2-3 minutes, until sauce thickens and coats vegetables.
- Add the beef back into the skillet, and mix until well-combined.
- Serve over rice.
