Weeknight Stir Fry
Need a 20-minute recipe for chaotic nights? This is our go-to on the farm. Use whatever veggies you've got on hand, sauté them with a yummy sauce, and serve over rice. Filling, comforting, and EASY.

Ingredients

  • Stir Fry Beef
  • (1-2 tbsp) Cooking oil
  • (2-3 cups) Assorted Veggies (such as peas, carrots, cauliflower, cabbage, greens, etc.)
  • (1/3 cup) Soy sauce
  • (1/4 cup) Sesame oil
  • (1 tbsp.) Cornstarch

Directions

  1. Heat a skillet over medium-high heat. Add the stir fry beef and cook until browned, about 3-4 minutes. Remove from skillet and set aside.
  2. Heat the cooking oil in the skillet. Add the vegetables and cook until most of the liquid evaporates and the vegetables are soft.
  3. While the vegetables are cooking, mix the soy sauce, sesame oil, and cornstarch in a jar, and shake well.
  4. When the vegetables are almost done (about 3-5 minutes left), add the stir fry sauce to taste. (A little goes a long way!) Cook 2-3 minutes, until sauce thickens and coats vegetables.
  5. Add the beef back into the skillet, and mix until well-combined.
  6. Serve over rice.
