- Servings: 4
Directions
Ingredients
- 1-2 packages St. Louis Ribs
- 2 tbsp salt
- 1-2 tbsp chili powder
- 1 tsp ground pepper
- 1 tsp paprika
- 1 tsp ground mustard
- 1/2 tsp garlic powder
- 1/4 cup honey (or brown sugar)
- Barbecue sauce (or mix together 2 cups apple cider vinegar, 2 tbsp. ketchup, 2 tbsp. honey, 1 tsp. red pepper flakes, 1 tsp. black pepper, and 1/2 tsp salt)
Directions
- Preheat the oven to 250 F.
- Combine the ingredients for the dry rub (salt through garlic powder) in a bowl. If using brown sugar, add to the dry rub ingredients.
- Flip the ribs, meat side down, on a baking rack or sheet. Prick holes in the membrane on the back, alongside the bones.
- Cover the back with dry rub and flip, meat side up, and cover again with dry rub. If using honey, drizzle over the meat here.
- Cover with foil or place in an oven-proof pot with a lid to help retain moisture. Cook for 2 hours.
- Remove from oven and uncover. Increase oven temperature to 350 F.
- If using an oven-proof pot with a lid, transfer ribs to a baking sheet, meat-side up. Baste or brush with barbecue sauce. Return to oven and cook for 10 minutes.
- Repeat this process (remove from oven, baste/brush, and cook for 10 minutes), 3-4 more times, for a total of 30-40 minutes additional cooking time.
- Remove from oven and let cool. Slice into portions and serve.
