Lemon Pepper Whole Chicken

Do you need a recipe you can prep in 5 minutes - and then forget about? If so, this slow-cooker lemon pepper chicken is your friend. It pairs well with hummus and naan, and some quick-roasted veggies, like asparagus or broccoli.

Ingredients
- (1) Whole Chicken - Small
- 1 small lemon, halved
- Salt
- Lemon Pepper
- (2-3 sprigs) Rosemary
- (3-4 sprigs) Thyme
Directions
- Pat whole chicken dry. Generously cover with salt and lemon pepper, and then place on a rack in the slow cooker (or shape foil into a "ring" to rest chicken on if you don't have one!)
- Place 2 lemon halves in cavity of chicken. Place rosemary and thyme on top.
- Put cover on and cook on HIGH for 4 hours.
