Making pure chevré is a simple and slow process that follows time-honored French farmstead techniques. Pasteurized milk is treated with yogurt cultures to develop into curds and whey. From, there the solids are either combined to form a soft, spreadable cheese, or rolled gently into a mat and drained to form logs.
On the farm, Alpine and Saanen goats spend their days foraging on pastures and the woods, where goats are happiest, and return to the barn twice a day for milking, where they also receive supplemental feed to support their nutritional needs as nursing mothers.
Celebrity Dairy is also a long-standing, viable farm in the Chatham County community. Established in 1987, when the original owners discovered they could tolerate goat milk despite their intolerance for cows' milk, the cheese has been tested and perfected for years to become the highest-quality goat cheese in the area.
