Ham neck bones are also a great option if you're on a budget and looking for a cut that will add flavor and nutrients without breaking the bank. Because our woodland-raised pigs forage and exercise outdoors, they have higher concentrations of collagen and minerals, both of which will break down as you cook the hocks.

Quick Tip: Plan ahead when thawing a ham hock! It takes about 4 to 6 hours per pound to thaw in the refrigerator.
